This October, Casa Lawa welcomes Raphael and Ana from La Kitchen for a four–day culinary retreat exploring Chinese cooking through the lens of Sicily.
Together, we'll dive into some of their favourite Chinese recipes and techniques, using the seasonal produce and local ingredients available around Casa Lawa in October. The idea is not to recreate traditional Chinese cooking ingredient for ingredient, but to explore how classic techniques can be adapted to what grows around us.
Over the course of the retreat, guests will learn how to make dim sum, preserve seasonal vegetables through Chinese pickling techniques, and bake a classic Chinese sweet. Each workshop will be followed by a meal, during which we gather around the table and enjoy what we've made together.
Expect plenty of hands-on cooking, long lunches and dinners, Sicilian produce, Chinese techniques, good wine, and the kind of slow, communal days that make Casa Lawa feel like home.
